My name is Jae Choi, though I am widely known as Chef Jay. With more than 35 years of experience in the culinary industry, my career has spanned multiple countries, cultures, and professional standards—from the demanding kitchens of South Korea to Canada’s highly regulated culinary environment.
This Kitchen Lab is where I share practical knowledge from professional kitchens, along with the culinary principles and scientific reasoning that help chefs achieve consistency, precision, and better results.
My Journey: From Five-Star Hotels to the Red Seal
Before relocating to Canada, I built my culinary foundation in South Korea. During that period, I earned national technical certifications in Korean, Japanese, Chinese, and Western cuisine, as well as confectionery and baking. These qualifications were important milestones, but they represented only the beginning of my professional development.
My practical training was shaped in demanding culinary environments, including artisan bakeries, traditional Korean fine-dining restaurants, and the renowned kitchens of The Westin Chosun Hotel Seoul. These experiences taught me the importance of precision, discipline, preparation, and attention to detail—qualities that remain essential in every professional kitchen.
I later immigrated to Canada as a skilled worker and continued my career in Toronto’s competitive hospitality industry. I worked with internationally recognized hotel brands, including Hyatt and The Westin Harbour Castle Toronto.
To strengthen my understanding of Canadian culinary practices and professional systems, I also enrolled in the Culinary Management program at George Brown College.
Based on my previous professional experience in Korea, I was permitted by the Canadian apprenticeship authority to challenge the Red Seal examination directly. I successfully passed the examination and, to the best of my knowledge, became the first student to earn Red Seal certification while still enrolled at George Brown College.
Elite Catering and High-Volume Operations
Today, I bring together my international experience, technical training, and operational knowledge as the Owner and Executive Chef of GOONG FINEST CATERING in Toronto, Canada.
Our work extends beyond conventional catering. We manage large-scale culinary operations for corporate events, private functions, major productions, and international entertainment tours.
Our team has successfully delivered more than 1,000 servings per event for globally recognized K-pop artists, including BLACKPINK and SEVENTEEN, during their Toronto performances. These projects require far more than cooking. They demand menu planning, purchasing control, production scheduling, food safety management, transportation logistics, and precise coordination under strict deadlines.
Experiences like these have reinforced my belief that professional cooking depends not only on recipes, but also on systems, judgment, and the ability to maintain quality at scale.
Why I Created This Kitchen Lab
I created Chef Jay Choi’s Kitchen Lab to address a gap I have often observed between common home-cooking advice and the methods used in professional kitchens.
Cooking is not simply a matter of following instructions. It requires an understanding of why ingredients behave differently, why certain techniques succeed or fail, and how chefs adjust their decisions according to volume, equipment, timing, and the condition of the ingredients.
Once these principles are understood, cooks gain the ability to adapt, solve problems, improve consistency, and develop their own culinary judgment.
